This is a lovely sweet treat that I include in the recipe book for my Spring 5-Day Detox in case you have a sugar craving (as we avoid having sweets during the detox). It contains natural ingredients, it’s very easy to make and it will satisfy your sweet tooth!

Serves 4

Ingredients:

  • 250 gr frozen raspberries
  • 140 gr raw cashews
  • 120 ml full-fat canned coconut milk
  • 2 TB lemon juice
  • 1 TB raw honey / maple syrup (optional)
  • Water, if needed to help things blend

Directions:

  1. Soak cashews for 4-6 hours in clean water that covers the cashews by about 2 inches. Or, if you’re in a hurry, you can boil 2 cups of water and pour over raw cashews to help them soften, and let soak for about 30 minutes.
  2. Drain cashews, then add the ingredients in the order listed to a blender or food processor and mix until blended. Add water to help things blend if needed, 1 tablespoon at a time.
  3. Transfer mousse to an airtight glass container and place in the fridge to chill for at least 30 minutes before enjoying.
