This is a lovely sweet treat that I include in the recipe book for my 5-Day Detox in case you have a sugar craving (as we avoid having sweets during the detox). It contains natural ingredients, it’s very easy to make and it will satisfy your sweet tooth!
Serves 4
Ingredients:
- 250 gr frozen raspberries
- 140 gr raw cashews
- 120 ml full-fat canned coconut milk
- 2 TB lemon juice
- 1 TB raw honey / maple syrup (optional)
- Water, if needed to help things blend
Directions:
- Soak cashews for 4-6 hours in clean water that covers the cashews by about 2 inches. Or, if you’re in a hurry, you can boil 2 cups of water and pour over raw cashews to help them soften, and let soak for about 30 minutes.
- Drain cashews, then add the ingredients in the order listed to a blender or food processor and mix until blended. Add water to help things blend if needed, 1 tablespoon at a time.
- Transfer mousse to an airtight glass container and place in the fridge to chill for at least 30 minutes before enjoying.
